The V8s are harder to find. From the comments I have read, the difference in gas mileage between the V8 and I6 is negligible.
You get a little better HP stock, more low end torque and a beefier rear axle with the V8. I expect you also have a lot more options for performance mods if that is of any interest.
I have a 2007 Suburban with the 5.3 and 3.73 gears and 32" tires. It gets pretty close to the same gas mileage as what my I6 (3.42 gears 32" tires) TB gets. I seem to average about 15MPG in mixed driving with both.
All that being said, with your stated mission, if you find an I6 that you love, I wouldn't pass it over. It is a great platform and you can upgrade the other items if your goals change later.
