So I'm about to bite the bullet and get the diff from a salvage yard. Before installing it what seals and/or bearings should I replace, without having to tear it apart or mess with any of the internal preset adjustments like preload and all that?

If you replace the bearings, you'll mess with the preload, I did it once and I got lucky with my preload. I've found that I can't get the inner seal (engine side) unless I order it. You should probably just order both, since you're gonna have to pull the disconnect on the passenger side anyway (to remove the intermediate shaft), you might as well check it out too. There's a great article here about rebuilding it.

You're about to have a ton of fun!

Brian is correct, the only seals and bearings you can replace are the CV axle bearing and seal. Everything else requires setting up the gears again.

Pulling the disconnect and diff is "interesting" LOL
